Instructions

Preheat and Prepare Dish: Heat the oven to 375°F (190°C). Grease a 9 x 9 inch casserole dish with avocado spray or your preferred cooking spray, then set aside.

Steam Broccoli: Place a large saucepan with about 2 inches of water on medium-high heat. When the water reaches a rolling boil, add the broccoli florets. Steam them for about 2 minutes or until fork tender. Drain the water, return the broccoli to the saucepan, and set aside.

Mix Ingredients: In a large mixing bowl, combine the softened cream cheese and mayonnaise until smooth. Stir in the garlic powder, sea salt, and pepper. Add the grated cheddar cheese followed by the chopped, cooked chicken. Finally, fold in the steamed broccoli until everything is evenly combined.

Assemble Casserole: Pour the chicken and broccoli mixture into the prepared casserole dish. Sprinkle the remaining 1/4 cup of grated cheese evenly over the top.

Bake: Place the casserole into the preheated oven and bake for 15 minutes to heat through and melt the cheese.

Broil for Finish: After baking, set the oven to broil. Broil the casserole for 2-3 minutes or until the cheese topping bubbles and develops brown spots, creating a delicious golden crust.

Serve and Store: Serve the casserole warm. Leftovers can be stored covered in the refrigerator for up to three days.

Cheesy Ham and Potato Casserole

1 (32 oz) bag frozen hash browns

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1/2 cup butter, melted

2 cups shredded sharp cheddar cheese

1 small onion, diced

2 cups diced chicken ham

Directions

Preheat your oven to 375°F and grease a 9×13-inch baking dish.

In a large mixing bowl, combine the frozen hash browns, cream of chicken soup, sour cream, melted butter, shredded cheddar cheese, diced onion, diced chicken ham, salt, and pepper. Mix everything thoroughly.

12 ounces pasta (penne or rigatoni) uncooked

3 cloves garlic minced

8 ounces mushrooms sliced

4 cups fresh spinach roughly chopped

2 cups shredded cheese (mozzarella or cheddar) divided

1 cup milk

2 tablespoons olive oil to taste salt and pepper for seasoning

Directions

  1. Cook the pasta in a large pot of boiling salted water until just al dente, then drain and set aside.
  2. Heat olive oil in a sauté pan over medium heat and add the minced garlic, cooking until fragrant and lightly golden—about 1 minute.
  3. Add the sliced mushrooms to the pan and sauté until they release their juices and turn golden brown, about 5-7 minutes.
  4. Stir in the chopped spinach, cooking until wilted, about 2-3 minutes. Remove from heat and let the mixture cool slightly.
  5. In a mixing bowl, combine the cooked pasta, sautéed vegetables, milk, half of the cheese, salt, and pepper. Mix until everything is evenly coated and combined.
