Grilled pizza on flatbread
Ingredients:
- 1 premade flatbread (naan, pita, or any store-bought flatbread)
- 1 cup pizza sauce
- 1 cup shredded mozzarella cheese
- Your favorite toppings (pepperoni, veggies, cooked sausage, etc.)
- 1 tbsp olive oil
- Fresh basil or red pepper flakes (optional, for garnish)
Directions:
Step 1: Preheat the Grill
- Heat your grill to medium heat (about 375-400°F).
- Brush the grill grates with a little oil to prevent sticking.
Step 2: Toast the Flatbread
- Brush one side of the flatbread with olive oil and place it directly on the grill, oil-side down.
- Grill for 1-2 minutes until it’s lightly toasted and has some nice grill marks.
- Remove from the grill and place on a tray, grilled side up.
Step 3: Add Toppings
- Spread pizza sauce evenly over the grilled side of the flatbread.
- Sprinkle cheese and add your favorite toppings.
Step 4: Grill Again
- Place the assembled pizza back on the grill. Close the lid and cook for 3-5 minutes, or until the cheese melts and the bottom is crispy.
Keep an eye on it to prevent burning!
Step 5: Serve & Enjoy
- Remove from the grill, let it cool for a minute, then top with fresh basil or red pepper flakes.

Grandma Billie’s Hobo Packets
This is a recipe I learned from my mom and she showed me how to make it on our first camping trip, I also had something similar at confirmation camp. This is something my own kids love to eat if we are camping or have a firepit going in the backyard. It has a delicious flavor and is a great campfire comfort food with all the great flavors of summer, easy to make and everyone gets to make their packets just the way they like it.
Ingredients:
- 6 Hamburger patties, or 24 oz of ground chuck
- 6 potato, cubed
- 3 carrots, sliced
- 6-8 mushrooms, sliced
- 1 onion, chopped
- 1 tube of biscuit dough
- 1 clove crushed garlic
- 6 slices of cheese
- 1 pinch salt
- 1 pinch ground black pepper
Directions:
- On a large square sheet of foil, layer beef patty, potato cubes, carrots, mushrooms, onion and garlic. Then a slice of cheese and a biscuit. You can include any ingredients or switch anything out for something else such a zucchini or corn.
- Roll edges of tin foil together and seal tightly creating an aluminum pouch.
- Bury it in campfire coals or put in a preheated oven at 375 degrees F (190 degrees C). For either cooking method, cooking time is about 1 hour. You can eat it right out of the foil, or empty it into a dish.

Smoked Pig Shots
Ingredients
- 8 oz softened cream cheese
- 4 oz sour cream
- 1/4 cup shredded Colby Jack cheese
- 1.5 tablespoons sweet bbq rub
- 12 oz package of kielbasa (already cooked)
- 1 package thick cut bacon cut in half
- 20 pickled jalapeño slices
Glaze:
- 1/4 cup maple syrup
- 2 oz bourbon
- 2 tablespoons honey
Instructions
- Cut kielbasa into 1/2 inch slices and cut bacon in half. Wrap bacon around each kielbasa slice and secure together with a toothpick. Should form a cup or shot glass.
- In a medium bowl combine softened cream cheese, sour cream, Colby Jack cheese and bbq rub. Stir well to combine.
- Place the cream cheese filling into a piping bag or a sandwich bag (snip the bottom corner) and pipe filling into each pig shot about 3/4 of the way up. Add a pickled or fresh jalapeño slice to the top of each one.
- Place pig shots on smoker at 250°F and smoke for an hour. Then increase smoker temp to 350°F and cook for an additional 30 minutes. The bacon should be crispy and the cheese filling puffed and golden brown. Brush glaze on pig shots the last 5 minutes before you remove them from the smoker.
- To make the glaze, combine bourbon, honey and maple syrup together and whisk.
- Remove toothpicks from pig shots before serving. Brush glaze on one more time while pig shots are plated.
